custard!!! should it be thicker? if so what can i do other than go to shops? it is in the fridge cooling help as its i dont want to kill peoples taste buds at Christmas thank you fellowYahoo-ies

Darlin ...... don't worry, just put it back in the oven and let it cook some more ......... Also a cheesecake will be a little wiggly in the middle once it is supposed to be done. Just keep checking until its less-wiggly. Let it cool for an hour and then place in the refrigerator. A cheesecake is supposed to be left in the refrig for 4, 8, or overnight before eating. I ALWAYS put it in the refrigerator overnight before eating. When you cut into it, you will find your "perfect" first time cheesecake. Bon Appetite!

It's not going to "gel up" unless your recipe called for a gelatin powder added to the cheese.

Your best bet is to start over from scratch and bake your cheesecake until it's firm before taking it out of the oven. (The consistency won't affect flavor and some people prefer a creamy cheesecake over a solid slice (I make mine solid and serve it at room temperature because I like it that way.)

You can try taking it out of the refrigerator and bringing it back to room temp, then rebaking it until the center is firm. Don't rebake a cold cheesecake, though, because it will take too long for the interior to heat and you will end up with solid sides and runny center.
