Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots.
Meatloaf
3 pounds ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand
Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

OMG I JUST made this one lastnight and it was a huge hit.
1 1/2 pounds ground beef
salt and pepper
2 shredded potatoes
3 shredded carrots
1 egg
1/2 c bread crumbs
1/4 c ketchup
Mix the above ingredients and press into loaf pan.
1/2 c ketchup
1 tsp dry mustard
3 tbsp brown sugar
Mix the above ingredients and spread on top of loaf.
Bake in the oven @ 350 degrees for 45 minutes.
I swear this is the best I've ever made and my husband had 4 helpings!!!

Old Time Meatloaf
1 lb ground round
3/4 pkg Lipton Onion Soup
1/2 C. fresh onion. chopped
1/2 C. ketchup... maybe a little more
1 Tbs. parsley flakes
1 egg beaten
1/2 C. fine bread crumbs ( I use Progresso Italian flavor)
tomato sauce
4 bacon slices
Combine first seven ingredients and shape into loaf or place in loaf pan. Spread about 2/3 C. tomato sauce over top, then top with diced bacon pieces.
Bake @ 350, uncovered, for one hour. (The bacon really helps flavor the loaf.) Drain grease from bottom of pan when it comes from oven and then let it set about five minutes to firm up.
The next day, these make wonderful meat loaf sandwiches!

I don't mix or measure, just get a big bowl and mix up ground beef and ground sausage, season with what you like, I prefer garlic salt and pepper, to this add breadcrumbs (I make my own and season them), I add an egg, some ketchup and Worcestier sauce and mix it all up;. I don't use a loaf pan, I shape mine and bake it in a large cake pan, just cooks more evenly. You can certainly add what you like, such as diced onions or peppers. I usually put a bit of ketchup and shredded cheddar on top the last 10 minutes of baking.
For an Italian version, sorta, use pizza sauce instead of ketchup and top with mozzarella. When I make this I mix the meat all up, using Italian seasonings, I flatten out the meat into a rectangle, put some pizza sauce over it and some shredded mozzarella and roll it up and I do use a loaf pan to bake this in. Add more sauce and cheese the last 10 minutes of baking
For a western style use BBQ sauce and brown sugar instead of the ketchup.

6 tsp steak seasoning (yes steak seasoning)
1 large egg
Mix everything together. Bake on 350 for about 2 hours. Cover with foil the last 45 minutes. Serve with mashed garlic potatoes and green beans. Merry Christmas!

For a surprisingly yummy twist, take whatever basic recipe you like, and grate just a tad of FRESH GINGER into the mix before baking.
I know, weird right? I thought my hubby was nuts, but it was oh so good! It makes this simple dish more gourmet! Everyone will take a bite and say, "Mmm... what is that?!"

Meatloaf Muffins w/ BBQ Sauce
--Rachael Ray, FoodTV
1 2/3 to 1 3/4 pounds ground sirloin
1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil
Preheat oven to 450ºF. Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil, including top surface. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. While meatloaf muffins bake, make green beans in the microwave. Serve meatloaf with Smashed Potatoes and Cream Cheese on the side, too.

Mama's Cheesy Meatloaf
1 lb. ground chuck
1 egg, beaten
2 tbls. worcestershire sauce
1 cup ketchup
1/2 tsp. onion salt
3/4 stack Town House Crackers, crushed
2 cups grated cheese (I like sharp)
Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.
Sauce:
1 cup ketchup
1/2 cup mustard
1/2 cup brown sugar
Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.

(CAMPBELL'S) BEST-EVER MEAT LOAF
1 can Campbell's condensed Golden Mushroom Soup, divided (not as good w/ plain mushroom soup)
2 lbs ground chuck
1/2 cup fine dry bread crumbs
1 egg, beaten
1/3 cup finely chopped onion
1 tbsp. Worcestershire sauce
1/3 cup water
In large bowl, thoroughly mix 1/2 cup of the soup, the beef, bread crumbs, egg, onion & Worcestershire. In 12 x 8" baking pan, firmly shape meat into 8 x 4" loaf.
Bake at 350 degrees for 1 1/4 hours or until done. Remove meat loaf to platter, keep warm.
Spoon off all but 3 tbsp. drippings from pan. Stir remaining soup & the water into drippings in pan, scraping up brown bits from bottom. Over medium heat, heat soup mixture until hot, stirring constantly Serve gravy with meat loaf.
Makes 8 servings.
