Deep Dish Taco Squares
2 cups biscuit mix
½ cup cold water
1( 8-oz )carton sour cream
1/3 cup prepared Ranch salad dressing
1½ pounds ground beef
½ green or red bell pepper – finely chopped**
2 Tbsp. chopped onion**
1 pkg taco seasoning mix (¼ cup)
1 (8-oz) can tomato sauce
½ cup mild salsa
2 cups shredded cheddar cheese
Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish. Bake at 375ºF for 9 minutes.
Combine sour cream and Ranch dressing. Spread over baked crust and set aside.
Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well. Stir in tomato sauce and taco seasoning mix, spoon over Ranch filling.
Sprinkle cheese evenly over meat mixture. Bake at 375ºF, uncovered, for 20 minutes or until casserole is lightly browned. Cut into 12 squares to serve.
** If serving to picky children, you can omit the bellpepper and use 2 tsp. onion powder instead of fresh onions. Omit salsa and add a second can of plain tomato sauce.

Unforgettable Chicken Casserole
Makes 6 to 8 servings
3 cups chopped deli-roasted chicken (or cooked chicken)
2 cups finely chopped celery
1 cup (4 ounces) grated Cheddar cheese
1/2 cup slivered almonds
1/2 cup light sour cream
1/2 cup light mayonaisse
1 can reduced-sodium cream of chicken soup
1 (4-ounce) can water chestnuts, drained and chopped
1½ cups French fried onion rings
Stir together first 8 ingredients in a large bowl. Spoon into a lightly greased 11x7” baking dish.
Bake at 350ºF for 40 minutes; sprinkle onion rings evenly over top. Bake 5 more minutes or until bubbly around edges. Let stand 10 minutes before serving.

Since you don't have a lot of time to get prepared, modify your good ol' mac and cheese with this
Mac and Cheese Lasagna
1. 1 (7.25 ounce) package KRAFT Macaroni and Cheese Dinner, prepared as directed on package using Light Preparation directions
2. 1 1/2 cups spaghetti sauce
3. 1/2 pound lean ground beef, cooked, drained
4. 1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
5. 2 tablespoons KRAFT 100% Grated Parmesan Cheese
Cooking Directions
1. Preheat oven to 350 degrees F. Spoon half of the prepared Dinner into lightly greased 8-inch square baking dish.
2. Top with half each of the spaghetti sauce, meat and shredded cheese. Repeat layers. Sprinkle with Parmesan cheese.
3. Bake 20 min. or until heated through.
Yield: 4 servings
Substitute
If you happen to have 1 cup chopped cooked leftover chicken, you can use that instead of cooking the ground beef. Or leave it out for a meatless version.

Stuffed bell pepper:
Ingredients:
4 Medium Green, Red, Orange or Yellow Peppers
1 lb Ground Beef or Pork
1/2 Cup Cooked Rice
1/2 Finely chopped onions
12 oz. Tomato Sauce or spaghetti sauce
1 tsp. salt
Optional: Add a little hot sauce to spice it up
Directions: Combine cooked ground beef and rice in frying pan add tomato sauce, onions and salt. Heat until sauce starts to boil (med heat)
Cut tops off Peppers and clean out the inside of the pepper. (Can also be cut vertically in half) Rinse peppers under cold water.
Stuff Peppers with meat and rice mixture. Put the top of the pepper back on and cook at 350 degrees for 35 min or until well baked on top.
Optional: With 5 minutes left on the timer sprinkle bread crumbs then place shredded mozzarella or cheddar cheese on top.
Recipe for Stuffed Peppers Serves 4
or a quick QUICHE
1 -9" Pie shell
1 tablespoon butter,sweet & soften , spread this on the bottom of the pie shell.
12 pieces bacon* fried, crumbled, add crumbled bacon to the pie shell
Whisk:
4 Eggs
2 cups heavy cream
3/4 tsp salt ( I don't always use salt)
Stir in:
1/8 teaspoon nutmeg (trust me nothing is more incredible than freshly grated nutmeg)
1/4 pound swiss cheese (or 4 ounce bag)
Directions
Bake:
425 for 15 minutes
325 for 35 minutes
Let rest 15 minutes before cutting
I may love bacon. But I hate frying it. So. I microwave it. One minute per piece. I lay it on lots of napkins and it always comes out perfect. I even do 8 or more pieces at a time. I do one layer 4 pieces on like 4 paper towels then top with more paper then layer more bacon in different direction. Again 1 minute per slice on high. This has always worked for me at any microwave I use. Clean up is a breeze.

Glaze for ham:
2 cups brown sugar
1/2 cup honey
Juice from one 16 ounce can of pineapple rings in their own juice.
Mix until smooth and spoon half of mixture over the ham. Spoon the rest over half way through the baking time. Simple and easy.
Bake ham at 325 degrees F for 20 minutes per pound and when finished garnish with pineapple rings and cherries.

Marinate them in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with smashed potatoes, green beans and maybe some gravy. It is easy, fast and very tasty.

What about quiche and salad or if you live in a cold part of the country, a good homemade soup. I am not sure what you have in your house but I can usually pull together a frittata, quiche or soup without much trouble.
What about a shepherd's pie made with hamburger?
Or a hamburger or chicken stroganoff over noodles?
What about chicken and dumpling?
