I know it sounds insane, but a friend told me to put a piece of bread into the closed container with the cookies. Surprisingly it does work. I guess the moisture in the bread goes to the cookies.
I would try it if I were you, because I used to have the same problem that you are having.

Generally, sub shortening for the butter or margarine in the recipe. Butter/margarine make the cookies more crisp, Shortening makes cookies softer. Dont over bake!

This is a recipe I made today (double batch),,,,, add extra chocolate chips, & about 1cup peanut butter chips too.... YUM! (but I dont do nuts)

Best Choco chip cookies

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C).
Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.
Yield: 24 servings

If your cookies get too hard after baking them put them in a container with a lid and put in a piece of bread, the bread will soften them up really nice. Merry Christmas!!!

Under bake them by a couple of minutes. Just take them out of the oven a few minutes earlier than the recipe suggests. Make sure they aren't "doughy" though.

easy - add a unmixed packet of instant pudding mix to the batter and bake as usual. Works like a charm!

Bake the cookies for a shorter time than specified,or you could make your batter more moist,so it will be softer.

Simple: add more sugar and cook at a slightly lower temperature and remove them sooner: do not over cook them.

I've heard that the secret is to add brown sugar ..and the more the better.
