With a large sharp knife cut off both ends. Stand the pineapple up on one end ans start to slice the rind from top to bottom without taking too much of the fruit. Once you have removed the rind, cut the pineapple straight down the middle right through the core. Be careful not to cut yourself. Cut in half again. You can then easily cut away the core and either chunk or wedge your pineapple. If you're looking for round slices you have buy a special tool for that.

You don't peel it because it doesn't have any "peel".
There is a thin skin that can be cut off, but it's really not a peel.
So...
you take a sharp knife and cut off as thin a cut as possible to remove the skin. The trick is to take of f most of the skin without taking off too much of the fruit.

You don't peel a pineapple, you chop, trim, or slice it to get at the goodies.
