I need to melt white chocolate chips but I don't have a double boiler, can I just use a regular pot on the stove? What should I have my heat set at?

Put in a glass bowl in the microwave at 30 second intervals - the glass helps retain heat better. Also, stir it after each 30 seconds - as it heats, the last bit of solid chips will melt into themselves. I do this all the time! Happy Holidays!

I have one of those electric skillets that I fill about halfway with water and leave at 200 degrees, and I put a glass bowl in the water with the chocolate, it keeps it melted. If you are wanting to make something like buckeyes, it is really hard to do it in the microwave, because it will melt but it will not stay melted.

Before I got the electric skillet I used a medium sized sauce pan filled with water, and a small sauce pan to place inside with the chocolate. You could keep the temp to where the water is boiling lightly, or around a simmer. It works better than the microwave, but not as good as the skillet.

If you use a pot on the stove the chocolate will burn to the pan.

My wife used to be in the chocolate business. Half her "double boilers" were just pots that happened to fit one in the other. Glass doesn't conduct heat as well as metal, but once the chocolate has gotten to about 98° it'll stay melted. Nestles is high-sugar-content molding candy [cheap stuff] so the melt range is quite broad. Just stir it until it runs like water, then take it off the pot - you should have plenty of time to stir in the peppermint. (It'll probably stay liquid longer than you want.) No butter - you're just giving yourself a lot of extra work.

Use an oven safe dish, set the oven to 150 degrees and check occasionally.
This is actually better than a double boiler, because you can accidentally get water in the chocolate when using a double boiler, and this will ruin the chocolate.

I haven't used a double boiler in years (I keep intending to buy another one...), and I don't use a microwave oven, so I use a jerry-rigged "bain marie" for melting chocolate amongst other things: one sauce pan filled between 1/3 -2/3 with water; another smaller sauce pan that fits inside the larger one holds the chocolate. Make sure the water in the larger pan doesn't boil over (or worse, *into* your pan holding the chocolate!) as you are heating the pan. Don't forget to stir!

In the microwave, try for 30 seconds then stir, another 30 seconds and stir. Repeat the process until done.

If you have a metal bowl, you can use that over a pan of boiling water to make a double boiler. Use medium to medium-high heat.

Do you have a glass measuring cup with a handle? Put the chips in there, hook it over the side of the pot and just simmer the water and keep stirring the chocolate. White chocolate isn't really chocolate and will melt fairly quickly.

Use the microwave - medium setting - about 1 minute for halve a cup of choc chips.
If your settings are too high or you leave it to cook for too long it will be a sticky mess.
Start by experimenting with a little bit and see how that goes.
