Nothing - I have used both and they are the same in taste and performance.
Brands are the same but the difference is the type - low fat, sweetened condensed, caramelized, etc - each of the varieties is more important to the recipe than the brand.

Please disregard the other person.
They are completely different.
Carnation milk is evaporated milk - perhaps some water removed with a milk consistency. It can be whipped.
We used to dilute it and give to baby as formula.
Eagle brand is sweetened condensed milk almost like thin toffee and sweet.
You use them totally differently in recipes.
OMG another one - what is the matter with these people it is as different as sweetened whipped cream and 2 % milk.
Banging head on counter -
the difference is not colour - it is sugar and consistency and how you use it.
That 7 Layer bar does not work with carnation milk you need eagle brand which is almost syrup.

Eagle brand is condensed milk, a very thick milk that has had the water removed and sugar added to it.
Carnation is evaporated milk with about 60% of the water removed. It is not sweetened.
Carnation is almost like half-and-half and can be used for coffee, among other things. Eagle is used mostly for cooking.

Guess with the string of answer, you probably have got your answer! Hmm...let me try to answer this question differently, carnation milk belong to the world largest food company Nestle and it comes in many variations, generally evaporated milk is considered to be healthier.
In fact, in singapore, they have this healthier choice thing going on and carnation was given the stamp of approval as a healthier choice with the heathier choice logo...

cool, i actually made my 7'layer bars today and used eagle brand. the difference is color. but they are both just as good!
