Put them into a solution of cold water and either concentrated lemon juice or white vinegar. It only takes a tablespoon of the acidic lemon juice or vinegar per half gallon of water, and this helps slow down the oxidation. Also, fill up the container so there is not much air left and seal it before placing back in the refrigerator. If you only want to keep them overnight, just leave them covered by cold water in a saucepan.

You can use this method if you are using them later for mashed potatoes: if you only need to store them for a few hours or a day or two, try submerging them in water and a little salt in a glass bowl or a ziplock bag and keeping them in the fridge. This is best if it is just for short time because the longer they sit in liquid, the more water they will hold and it will make them terrible for frying or baking.

I used to put them in water. They normally go dark if you leave them out. I think it's air that makes it go dark.

Cover them with cold water, and pop in the fridge, or cool area. If you fancied, you could parboil them tonight, then they can keep in the fridge, not in water....I find that cold, parboiled pototaoes make the best roasters, the following day ;-)
