Make it as a standing rib roast. It will enhance the presentation. You can have them break the bones between the ribs for ease of serving but I would keep the bones in for roasting.

Merry Christmas

If I want a boneless one, I generally purchase a boneless rib roast.

If the ones available have bones, I generally leave them in. It makes for a nice presenation.

You can roast it with the bones in. Then slice them off before you serve it.

That bone is what gives your roast the nice flavour so please don't remove it. Cut it off after the roast is cooked if you like.
