hello .. Im cooking beef in a slow oven . I dont know how hot it is, but I have one of these things that you push it into the thickest part and it tells you the temp inside the joint.well its been in the oven for 8 hours and the temp is 130c , I plan to leave it in till it reaches 170c for . but im not sure if how much longer this will take ? . has anyone cooked beef like this before as im not sure if im doing it right ? ...the joint is a 6 kg in weight .. any help would be good .. thanks ..

there is no setting on the oven its just a on or off . inside its not that hot so dont ask how it cooks but ive done chicken in it and it takes 6 hours to cook . I carnt do the f to c I live in the uk

sorry its 130 f now . Im waiting for it get up till 160-170 f

Ok, I assume you mean the internal temp is now 130C? That is 226 F. Which should make the roast done.

According the US Department of Agriculture.

Beef
Beef roasts cooked to 160 °F, 71.1°C , will generally have very little pinkness to the meat, and the juices will not be pink or red. Below the temperature of 160 °F, the center of the roast will be pink or red, depending on the internal temperature. A beef roast cooked to 145 °F,62.8°C, in the center can be considered safe since the exterior of the roast would have reached a temperature high enough to destroy bacteria, unless it is a rolled roast or one that has been mechanically tenderized. A consumer would not be able to determine if a roast that was pink in the center had reached the safe temperature of 145 °F,62.8°C, without a food thermometer.

I personally like a roast cooked until it is falling apart. And has had adequate liquid added to keep it moist.

Wow! It is a wonder it isn't a cinder by now. Those are the temperatures you want in Fahrenheit, not centigrade. I hope you were planning to have it fall off the bone. If that is the case, temperature is no longer the issue. You should be able to shred it with two forks pulling in opposite directions. It should resemble ropas viejas (beef) or carnitas (pork).

It will only reach the highest temp that your oven is set to. If it is set at 130 then that is as hot as the beef will get. If you set it at 160 then that is as hot as the beef will get.
