Maybe it's a way of flipping off the Jews...
Early Christian: Hey Moishe, come to our Christmas dinner?
Moishe: Oh yes, I'd love to! What's on the menu?
EC: Ham!
M: But I can't eat ham!
EC: I know! PSYCH! HAHAHAHA
Another possible reason is that Christmas originated from the pagan Nordic holiday Yule. Boar (ham) was a traditional midwinter feast dish among the Northern Germanic pagans, including the Angles, Saxons, Jutes, and Danes who established many of the earliest English customs.

A Christmas Ham or Yule Ham is a traditional dish in the ancient and more regionally specific modern Scandinavian and English celebrations. The tradition is suggested to have began as a tribute to Freyr, a god in Germanic Paganism associated with boars and fertility.
When pagans converted to Christianity, they brought their customs and traditions with them.
The Christians of the Middle ages used the eating of ham as an insult to the 'then' hated Jews who viewed the eating of pigs as an abomination.

I never knew there to be one. Christmas ham? This is a family tradition, surely, not a cultural one.

It's a protest.
Lev 11:7 And the swine, though he divide the hoof, and be clovenfooted, yet he cheweth not the cud; he [is] unclean to you. Lev 11:8 Of their flesh shall ye not eat, and their carcase shall ye not touch; they [are] unclean to you.
