My family is having turkey on X-mas day and I'm in charge of cooking the mash potatoe dish. I'm looking for a recipe with a "twist". Previous years, I 've added sour cream, cottage cheese, and cream cheese. Also, what spices or fresh herbs compliment a mash potatoe dish?

Thinly slice a load of onions or leeks, or both. Fry them gently for a long time (like, 45 minutes at least) until they are brown and sticky, almost like marmalade, and take up about a tenth of the volume that they did when they were raw. Don't add any sugar while cooking, but a little salt is good.

Add these to the mash. It'll be lovely.

Well I don't know that it's very unique, but I LOVE mine with roasted garlic mashed in, along with some freshly minced parsley and chopped chives. You can also add some shredded sharp cheddar for a cheesier mash, or pepper jack cheese for a little more kick.

Cook a turnip in with the potatoes or leeks will make a delightful addition. Good Luck!
