Some pork just goes crispy and others dont and if it doesnt then cook the pork and then take it out of the oven the skin should then just peel off and put it under the grill keep an eye on it but thats the best way and you can control it.
thats what my mum does and its the best every time!!1

Make sure you take off the wrapping the day before, so the skin is really dry before you cook it. I guess the boiling water trick works because the heat will make the water evaporate and give you really dry skin too. Salt helps but I have always had good crackling since I learnt the dry skin trick!!

I generally fail too - but I have taken to grilling it for 10 minutes before I serve - so even if none of the other answers has the magic method - you can always put the chewy stuff under the grill to crackle it up!

What I do is after it's cooked take the skin off and cut it into pieces and then fry it in hot oil and it comes out better than shop bought crackling, happy christmas to you and your family too, enjoy.

240 degrees centigrade for the last 10 minutes, when cooking, angle the pork so that the juices run away from the crackling.

cut diagonal gashes in the fat on top.
some say that a bit of salt will make it crispy, and some people pour boiling water over it 2 dry up the skin(sounds stupid, i know). make sure the oven is really hot.
