Merry Christmas Eve Day to all!! It's that day again... the day that I do my Christmas Baking... WOOOOOO!!! So I was wondering if anyone out there happens to have a COOKIE RECIPE? I have searched the internet over and over again, and found nothing! Well, at least nothing that I liked. (I'm very picky in my cooking) Sooooo I have turned to all of YOU for answers. If anyone out there has a cookie recipe they are willing to share, I'd sure love to hear it! Weather it be sugar, chocolate chip, peanut butter, etc. I'm willing to try ANYTHING... (that doesn't include rat poision.) Well, I'm going to stop typing now because my mom is fixing to go too the store and she needs to know what I need to make my cookies...

Sugar Cookies:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
Peanut Butter Cookies:
1/2 cup margarine
1/2 cup peanut butter
1 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the margarine, peanut butter, and sugar. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking powder and salt; stir into the peanut butter mixture. Drop by rounded spoonfuls onto the unprepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven. Do not overbake: cookies will be soft and chewy. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Lemon Cookies:
1 (18.25 ounce) package lemon cake mix with pudding
1 egg
2 1/4 cups frozen whipped topping, thawed
2 cups confectioners' sugar
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Mix the cake mix, egg and whipped topping together. Beat with an electric mixer on medium speed until well blended (batter will be sticky).
Drop batter by teaspoonfuls into the confectioners' sugar and roll to coat. Place cookies onto ungreased baking sheets and bake at 350 degrees F (175 degrees C) for 8 to 10 minutes or until lightly browned.

DIRECTIONS
Preheat oven to 350 degrees F (180 degrees C). Lightly grease 2 cookie sheets.
Cream together sugar and butter. Beat in egg yolks and vanilla.
Add flour, baking soda, and cream of tartar. Stir.
Form dough into walnut size balls and place 2 inches apart on cookie sheet. Don't flatten. Bake 10 to 11 minutes, until tops are cracked and just turning color.

These were a BIG hit at our company Christmas Party.
Thumbprint Cookies
1 ½ Cup all purpose flour
¼ tsp. salt
2/3 Cup butter (not 2/3 stick!)
1/3 Cup sugar
2 egg yolks
1 tsp. vanilla
2 slightly beaten egg whites
2 Cups finely chopped pecans
White icing (add desired amount of food coloring)
Stir together flour and salt. Beat butter for 30 seconds; add sugar and beat till fluffy. Add egg yolks and vanilla; beat well. Add dry ingredients in batches, beating till well blended. Cover and chill 1 hour. Shape into 1 inch balls; roll in egg whites, then roll in finely chopped pecans. (Hint: start with about ½ cup pecans and add more as needed.) Place 1 inch apart on non-stick cookie sheet. Press down centers with thumb. (Hint: the egg whites may cause the cookie to stick, so be sure to use a good quality non-stick pan.)
Bake @ 350 for 15 to 17 minutes.
Cool on wire rack.
Fill center with preserves or icing.

Sugar Cookies
Mix together
1/2 cup soft butter

stir in

1 tablespoon milk or cream
1 teaspoon vanilla, lemon or almond flavoring
Stir together and stir in
1 1/4 cup flour
1/4 teaspoon baking powder
1/4 teaspoon salt
Chill dough. roll very thin (1/16"). Cut into desired shapes. Place on lightly greased baking sheet, and sprinkle with sugar. Bake until delicately browned. 425 oven for 5-7 minutes. Makes about 5 doz 2 1/2" cookies.

You can also steal food from their fridges if you want. I did, but, shhh it's a secret. So after you fly to the moon, and then jump in the ocean, and if you are able to get out, you will put the cookies in Mount Kiluea in Hawaii (it's a volcano) in order to bake them. Here's an easy one that is a favorite of my children.
Drop Sugar Cookies
Cream together 3/4 C. Crisco shortening and 1 C. granulated sugar.
Beat in 2 large eggs, 1 tsp. vanilla extract, and 1/2 C. milk.
Sift together 2 1/2 C. cake flour, 1 tsp baking soda, and 1/4 tsp salt.
Drop by tsp. onto ungreased baking sheet. Sprinkle with colored sugar crystals. Bake 8 minutes at 375* F.

Directions:
PREHEAT oven to 350° F. Foil-line and grease baking sheets.
COMBINE coconut, sweetened condensed milk and vanilla extract in large bowl. Stir in morsels. Drop by level tablespoon on prepared baking sheets; press each cookie lightly with back of spoon.
BAKE for 10 to 14 minutes or until lightly browned around edges. Remove to wire racks to cool completely. Store loosely covered at room temperature.
