Fresh Vegetable Cheese Ball

8 ounces neufchatel cheese, soften
2 cups low-fat cheddar cheese
1/4 cup finely chopped broccoli florets
1/3 cup shredded carrots
2 tablespoons finely chopped green onions
1/2 teaspoon dill weed
1/2 tablespoon fresh coarse ground black pepper

Combine cheese, broccoli, carrot, green onions, and dill weed in mixer bowl; mix well.
Chill covered for several hours and shape into a large ball.
Roll in the ground pepper.
Serve with crackers.

For an easy one, get Knorr's Vegetable Soup & Dip mix and look at their recipe for spinach dip.

I leave out the water chestnuts, and add 8 oz. each softened cream cheese, and shredded sharp cheddar cheese. Also some worcestire sauce to taste.

Decorating ideas:

Roll ball in mixture of dried parsley and chopped nuts. I sometimes take dried roast beef in the jar and microwave it for about 30 seconds, then crumble it and use to roll around, but you wanted meatless.

For a recent Christmas party, I chilled the cheese ball in a bowl with plastic wrap, then frosted it with cream cheese and milk an added some blocks to make a front door of an igloo. The tray was covered with cream cheese, and I added a snowman statue, and made a bunch of black olive penguins (you use large and small black olives. Cut a slit in the large ones and fill with cream cheese piped from a baggie. Cut carrot slices about 1/4" thick, and a small wedge out of each one. Stand the stuffed olive on the carrot, then use the wedge in the small olive as a nose (put it sideways and it goes in the hole where the pit was) and keep it together with a toothpick.

INGREDIENTS

1 teaspoon lemon juice concentrate
1 (8 ounce) package shredded Cheddar cheese
1/4 cup chopped onion
1/2 cup chopped green olives



DIRECTIONS
In a medium bowl, blend cream cheese, mayonnaise and lemon juice concentrate. Mix in Cheddar cheese, onion and green olives. Form the mixture into a ball shape. Cover and chill in the refrigerator 3 hours, or until firm, before serving.

I am partial to just using cream cheese and bleu cheese plus some chopped green onions. Use 1/4 the amount of bleu cheese to the amount of cream cheese plus 3 or 4 chopped green onions. Serve with a variety of crackers and a couple knives. You could chop or shred any type veggies you like and incorporate them into the mixture.

this year i used 16 oz port wine cheese , mixed w/ 1 stick butter , 8 oz cream chz , rolled in crushed almonds -pecans-cashews-peanuts + brazil nuts. it came out terrific
