i have a 7.5 boneless beef ribeye rib roast and need some help. i have my recipe so that's not the problem . i made 2 last year for x-mas and they turned out great . my problem is i cannot remember if i covered it or cooked it uncovered . can anyone help ?? i hope as i'm puting it in around 1:00 c.t

I usually start out with it not covered, and towards the end, like the last hour, cover it. Hope that helps. It sounds yummy.

Place rib eye roast, fat side up, on small rack in open roasting pan. Insert meat thermometer into center of roast. Roast meat in 350 degree oven about 1 hour and 20 minutes or until thermometer reaches 140 degrees for rare or until desired doneness. Partly cooked potatoes can be arranged in roast drippings to finish cooking and brown.

I cook mine uncovered and I always start the oven super hot (500 degrees) and then cut it back down to 350 (or 325 - have to check recipe) and then cook it 20 minutes per pound. I don't cover it because I like the crispy outside bits.

Yum! I do a prime rib every Christmas - don't you love it? I don't cover it - covering it will make it steam in its own juices, instead of roasting it...I definitely recommend not covering it! Happy Holidays!
