Should I use soldering wire or a different wire?

Solder is too soft really, and pretty expensive. It tarnishes easily too. (it is awfully heavy, older solders are about half lead, so there is toxic material.)

Brass, copper, steel(annealed) can all be good choices.

Alexander Calder might be of interest to you. He was famous for wire sculpture as well as his mobiles.

If you are going to work entirely by twisting copper or steel or brass are good choices. If you are going to add soldering, steel can be a problem and handling galvanized steel can lead to health problems with the zinc coating - wash hands before eating or drinking and watch where you put them while working

You could use copper wire also
