Jews were considered 'white' but they were also the victims of discrimination. Though not nearly as bad as the discrimination against blacks in the South. Blacks couldn't eat in white restaurants, drink from white drinking fountains, or use white restrooms. Jews could do those things but were not allowed to join white clubs, get into white universities, join certain unions, or go to white resorts, that kind of thing.
It was wrong but not nearly as wrong as the discrimination against blacks. One reason was that Jews were often impossible to tell from Christians, but blacks were easy to tell from whites.

In America during segregation there weren't really many laws about asian or hispanic people, simply because there weren't many asians or hispanics in America around that time. However I know that in South Africa, during apartheid there were three classes: white (basically 1st class citizen) black (low class citizien) There was also an 'other' group which was kind of between the two. Asians and hispanics didn't have as much power as whites did but they were treated better than blacks were.

Jews were considered white for purposes of segregation in PUBLIC institutions. Many PRIVATE institutions, however, such as pools, clubs, residential complexes and fine restaurants, excluded Jews along with non-whites.

Jews were considered white.
However, there were many jews who were instrumental during the Civil rights movement.
A case I know of:
Andrew Goodman, a 20-year-old, Jewish Civil Rights Activist/ anthropology student from New York and Michael Schwerner, a 24-year-old Jewish social worker were murdered in 1964 while attempting to register black voters in Mississippi.
The person who was murdered with them was James Chaney, a 21-year-old black man from Meridian, Mississippi.
Believe it or not, they were murdered by the town Sheriff, Lawrence Rainey(A KKK member) and some other men.

They were considered white. Generally, suppression of the black populace was the key concern to pro segregationists. This was also the case in South African apartheid, and most other post war counties that were perpetrators of segregation...

Jews were the commanders and blacks were foot soldiers during the Civil Rights Movement. After the Civil Rights Movement Jews got rich while blacks remain black
