Norah Jones - Come Away with Me, The Nearness of You, Turn me on...the list goes on. Great, romantic songs with that touch of jazz.
On that note, alot of older jazz singers- ella fitzgerald, etta james, and so on- recorded alot of romantic standards. My favorites- "Embraceable you" and "At last". What a good song.
More contemporary- Whitney, (though "I will always love you" lyrics are pretty bittersweet, I would try 'I believe in you and me' or 'saving all my love for you'), Mariah, and Celine (my heart will go on) all have some great power ballads.
I'm actually a Broadway fan, where you can find some love song gems. Some favorites: All I Ask of You -Phantom of the Opera, The next ten minutes- The Last Five Years, Say it Somehow- The light in the Piazza, ( those are actually duets, but for purely female I'd reccommend 'Til there was you' or 'Gimme Gimme')
Others- Thank you- Dido, Only Hope- Mandy Moore, From this Moment- Shania Twain, Breathe or This Kiss-Faith Hill,
well, as you can see I have random taste in music. Hope one of those genres fits your interests!
Oh, and 'Someone to Watch Over me'.

whitney houston song " i will always love you" or "tattoo" by Jordin Sparks or "i turn to you" by Christina Aguilera
is`a great choice.. but it's pretty hard to sing..
you could just pick songs that you like and change the lyrics and keep the melody.. you could even say to your lover that you write it for him and was thinking about him when you write it..
the important thing is you keep it simple and short..but with a deep meaning
