It actually goes back I think to a time when sneezing was a symptom of bubonic plague or some sort of disease that usually meant certain death. People would say "God bless you" because they thought that person was about to die and the tradition has just carried on.
And your heart doesn't really stop when you sneeze

because everytime you sneeze, your heart skips a beat, thats why people say god bless you, when you fart, nothing really happens except you offend people around you.

Lol, I always heard the heart thing too, but I don't think it's true. I'm guessing the person who said it had to do with the plague has it right.
