The yolks of the eggs are removed and only the whites are used. Very light cake too.

Now remember... I'm not a good cook.... but if I remember correctly, a white cake is more of a vanilla flavored cake made with only the egg whites and no yolks. A yellow cake is very similar but is made with the egg yolks. I don't think it is a sponge cake. A white sponge cake would be more like angel food cake.

Whitecake means a cake made without egg yolks.

White cake is made with white flour, white sugar, white salt, white baking soda, white baking powder, white shortening (vegetable or animal fat), white cows milk, vanilla, & egg whites.
It is not sponge cake unless you do the excessive whipping of the egg whites & sugar to turn it into sponge cake before it is put in the oven to bake! Cream of tarter is used in spongecakes & so are egg yolks.

Shan we have white cake which is white when you add your egg you only add the whites.
We have yellow,chocolate,spice,
many others.
This is how I would best describe it but I'm sure some of the good bakers has a must better meaning.
