If it's strictly platonic, then I'd go with a woman: Emma Watson or Natalie Portman -- they seem to be intelligent, fun, and have lots we can chat about. And they'd probably be responsible enough not to come in drunk at odd hours or leave the place a mess.
Otherwise it'd be Gael Garcia Bernal and he can make a mess wherever he wants.
