Turkey contains tryptophan, which does make you a bit sleepy. That, combined with the amount of food, and probably alcohol, makes you apt to doze off.

Consumption of turkey, rich in the amino acid L-tryptophan, causes drowsiness, by virtue of elevated serotonin levels. L-tryptophan is metabolized into 5-hydroxytryptophan, which in turn, is metabolized to serotonin, also called 5-hydroxytryptamine.

It is a practice to take L-tryptophan, or 5-hydroxytryptophan, along with vitamin B-6, as a sleep aid. Vitamin B-6, is a coenzyme in the biosynthesis of serotonin.

the turkey is a creature that is linked to the god of hypnos, worshipped by many and sacred day (dec 25th) iswhen the magic turkey comes and sprinkles sleep dust (made from stuffing) in people's eyes.
Then Hypnos' brother, Morpheus, comes with dreams (usually about the 'Great Pudding') and therefore, the idea of Turkey making you sleepy is legitimised.
Of course, it doesn't come true if you pull the wish bone or rub yourself with the sixpence you find in the pudding, but then the bad sprout comes, and it all gets messy...
