Excellent Queston...
Here are ten candidates, who all played for a decent amount of time, and a ton of their value came from their defense. Read that last part carefully... These guys had a lot to offer, and a large chunk of their value came from their defense.
Andruw Jones
Paul Blair
Curt Flood
Garry Maddox
Max Carey
Dom DiMaggio
Richie Ashburn
Jim Edmonds
Tris Speaker
Willie Mays
The best guy I saw with my own eyes was Garry Maddox. Jim Edmonds has a lot of Sports Center highlights... but if Maddox had played ten years later, he would have the same resume. Guys like Gary Pettis and Devon White have the same advantage, but I don't know if there is quite enough there. Steve Finley covered some ground, Kirby Puckett hardly ever made a mental mistake. Brett Butler too. They are more recent names... we forget about guys like Max Carey... after several generations.
Richie Ashburn has supporters. The Bill James Method props him up. He has a lot of putouts, but he had fly ball pitchers on the mound in front of him.
Fred Lynn was great, until he hit the wall that twenty-third time. He never was the same after that. Pete Reiser had his troubles too with the wall.
Willie Mays is a common choice, thanks to that catch very early in his career. There is nothing quite like fame. And nothing beats being famous with a good reputation before you hit your mid-20s. People think you are great up until the day you retire.
Guys like Mantle, DiMaggio, and Cobb are always mentioned..... but I would expect their hitting was well above their defense, even if it was above average for a long time. Junior Griffey is of this type. Torri Hunter is the lite version of Junior.
That said:
Tris Speaker
Garry Maddox
Andruw Jones
Willie Mays
Max Carey
(or someone else)

Willie Mays
Tris Speaker
Ken Griffey Jr.
Jimmy Piersall
Andruw Jones
Edit: Windy City - Speaker had 449 assists for his career (by FAR the most in history.) To put that in perspective, Cobb is second with 391.

Tris Speaker, Willie Mays, Joe DiMaggio, Richie Ashburn and Kirby Puckett.
Andruw Jones might bump one of these guys out once his tour of duty is over.

I'm not too sure about the top 5, but I believe that #1 is Kirby Puckett. Torii Hunter is in there too.
