Well if by oriental you mean raqs sharqi (dance of the east in arabic) or in layman's terms "bellydance" than what i find fascinating about the dance is how expressive it is. It is unlike anyother dance on earth. It is truly freeing for a woman and it makes every woman look and feel good. It's a dance that has a long and mysterious history and there are many styles so theres something that suits everyone. It's incredibly complex to master yet considerably easy to learn the very basic foundations. It's also fascinating that to be a masterful dancer in this style one must not only master the physical technicalities of the dance but also a whole new musical vocabulary which one must be able to tie into the dance in a cultural context.
Now if you mean Asian dances such dances of China, Japan, Taiwan, Thailand, etc... then I guess I don't have too much of an opinion. I've seen only a few perfomances so I guess what I find fascinating about those dances is usually how graceful and dainty the movements tend to be (this is on the whole 2 performances I've ever seen which totals about 10 minutes of experience so, I don't know that I have the best sample for the bases of my opinion).

"Oriental" is a bit wide a term - east asian dance styles very widely from country to country and from region to region.

But when looking at dance from China, Japan, Korea and so forth the things that I adore it the precision of movement and the use of props and costume as part of the dance (as opposed to Western ballet where the costume merely designated the character - Asia traditions have the costume do more than that.)

Normally I would post an example but I don't have a good video to show this region. But to get an idea of what I mean here is a video of Indonesian master dancer Didik Nini Thowok. The costume marks the character (in this case he's two in one) but it also amplifies the movements made.

When the ladies can manage to move their fans in unison. It must take alot of practice. I saw a performance recently and they got it just perfect. Also I love the costumes.

I love it because of its gyrations and seeing the dancers ' middrift and I think it tells a story.
