You are right that if the first and last word are placed correctly and the letters inside are mixed up, the brain can still decipher the word.
However, this is possible only when one is familiar with the word that is scrambled this way. If a word is not known to you, then it wouldn't be understood if it is scrambled this way. You can try this out.
This would mean that we ought to learn our spelling the correct way at first - or at least, as correct as possible - and know its general meaning. The vocabulary of an ordinary person being limited, spelling does become important, when you come across a new word.

While our brains can and do unscramble jumbled letters into the words we anticipate being there, spelling still matters. Poor spelling can mean somebody else gets the A+, the job, the book contract, the promotion, the plum assignment writing the newsletter, and so on.

People who know the language may be able to comprehend the word(s), but a person who is learning English (or any other language) will not be able to translate it. Also, spelling correctly displays intelligence.
