If you mail your self a letter about an idea you have does that offer any kind of protection against some one taking it?

No it does not, if you have an idea that you are putting out, then put the idea down on paper, have it notarized, and have a seal put on it. (Also date the letter)
I would also suggest you give it to your lawyer for safekeeping.

No, that's why there is a company to get your ideas and inventions patented, that is the only protection you have against theft of your ideas
