Well most Christmas songs I get very tired of very quickly, especially since the radio stations start playing them SO DARN EARLY!
All that aside, I think the best Christmas songs for a toddler would be upbeat, something the child could listen to and smile at, with a couple of slow traditional carols thrown in.
A sample listing would go as follows:

Frosty the Snow Man, Rudolph the Red-Nosed Reindeer, Grandma Got Run Over by a Reindeer(IF you think your 3 year old can handle it...some can't), and Do You Hear What I hear.
And I agree with you about hating Christmas classics being sung by new artists.

Home for the holidays -
its a grand old sing along the whole family can enjoy
We actually make the pilgrimage to Cannonsburgh Pa every holiday season to see his statue in the square and sing with the crowds - however we also go the see that groundhog in punxsutawnwy every feb also - go figure

i loove Fairy Tale of New York by the Pogues and Kirsty MacColl (RIP) - it's timeless! i've listened to it about 50 times already this Christmas =]
