Betty Frederick's Pepper Cabbage
1 head cabbage, shredded
1 green bell pepper, chopped
1 small carrot, shredded
1/4 to 1/2 cup water
1 teaspoon salt
1/4 cup sugar
1/2 cup apple cider vinegar
celery seed to taste
Toss it all together and put in a sealed container and chill. Turn container upside down once or twice to be sure cabbage gets in the juice.
This is good for holidays, even if you make a huge amount, because the vinegar essentially pickles the cabbage & pepper so it doesn't go bad.

Salad??? Arrgh no! We go for way-too-much-fat baked vegetables and leave the salad eating to the less hard-core. Have a wonderful Christmas, and enjoy the Greek salad!
