125g self-raising flour
60g unsalted butter and extra for greasing
60g soft dark brown sugar
half egg yolk (beaten)
1 tbsp clear runny honey
1tsp of orange zest
For the icing:
225g icing sugar, sieved
3 tbsp of orange juice
sieve flour into bowl, rub butter into flour until you have breadcrumb texture,
stir the sugar, orange zest, honey and egg into the flour & butter, until the mixture starts to come together in lumps.
use your hand to form a ball of dough, roll into a log.
Wrap log in cling film and chill it for 1 & a half hours.
Grease a baking tray with the remaining butter, slice the log and put it on the baking tray,
Bake for 7-9 mins at 180*c, 350*f, gas 4.
For the icing, beat the icing sugar and orange juice until they form a paste.
