I'm sorry I don't understand your question. I haven't heard of any sweet coconut topping for a potato - assuming baked. Haven't heard of coconut ice cream made with potato. Are you looking for something that substitutes coconut?

I have seen a recipe for Sauerkraut Chocolate Cake that calls for the sauerkraut but tastes just like it has coconut in it - no sour flavor at all.
