Here is a S.W.O.T (Strength, weakness, Opportunity, Threats) anaylsis for women engineers:
Strengths: learn to be analytical can apply to other aspects of your life, increase intelligence, become a mentor, help others solve their problems, Will have a stable job, engineering is national and international job, help attract other women into the field, a solid paycheck is a good thing. If interested in finding a intelligent mate, you will find more intellgient men in engineering school than at your local singles place.
Weakness: Will become an expert at a very small portion of work, takes some time to make a good income, feel isolated because most in field most are men, some positions like working on sites may be difficult for a women (slowly changing) to deal with, detractors may feel you are too smart, may be difficult to find a mentor.
Opportunities: Companies are looking for women engineers, can easily start a engineering company, with a engineering company can joint venture with other companies so they can get government contracts to gain experience, engineering is slow in changing - you can leave (or reduce involvement) the profession and come back to it without being missed or missing much.
Threats: Some engineering work is being sent oversea - minimal, sexual harassment - minimal most are your fathers age, and the company needs you more than you need the company, less job satisfying as you get older.
You should try to talk to different women engineers to ask what they see. They would be an excellent source of information.
Cheers and good luck!

industrial process control engineering
mechanical engineering
Civil engineering
Chemical engineering
aeronautical engineering

production engineering
You can almost write a book on the job opportunities in each one of those fields for both men and women.
I'd shy away from
Petroleum engineering and drilling engineering because those folks go where it is not fit for human habitation.
