Does anyone have any suggestions for two course meals on Christmas? This includes the three meals of the day.

For breakfast, my old man usually does a cooked breakfast at about 7am as the kids are usually up at the crack of dawn opening presents. Christmas lunch we're having lobster for starter (my mum got a great deal on some in Lidl suprisingly), roast turkey and goose for main with all the trimmings (roasties, veg, gravy, stuffing etc.) and then Christmas pud and trifle for afters- we have a lot of mouths to feed at Christmas, including the dog! We normally just have turkey or ham sandwiches in the evening as most of us are way too stuffed from lunch to eat much else! All of the above can be bought easily in shops and are relatively easy to prepare and cook.

It is traditional to do a 3 course christmas dinner, of prawn cocktail, Roast turkey with veg, roast potatoes, parsnips little sausages with bacon wrapped round, cranberry sauce and bread sauce with gravy and then christmas pudding or chocolate pudding or trifle for afters!! And for the evening meal just lay out cold meat, turkey and gammon get the cheeses out with a box of crackers and some jars of pickle and chutney, pickled onions, just stick it on a table for your guests to help themselves. Sorry forgot breakfast well I normally have something light as I like to be really hungry for my christmas dinner to enjoy!! But if you have to offer it to people then I would suggest a bacon sandwich!

xmas dinner is easy, cook the meat in the morning as soon as you get up, then you dont have to worry about timing it just right to be finished at lunch time.

Then all you need to do is the vegetables. If the veg are ready to early you can always warm them up at dinner time.

Use ready made if you are not a confident cook, you dont have to go mad and try to do a Delia Smith extravaganza!

Have a go, its not hard, people just think it is.

Simple prawn cocktail for starter - just shred some lettuce, a bit of cucumber maybe and tomato, pop prawns on top, pour over ready made sauce and stick a quarter of lemon the the side.

I will be putting turkey in the oven as soon as I get up, then can sort rest out through the morning.

Ready done sausages wrapped in bacon, ready made cranberry sauce, packet of stufing - theres plenty of easy ready to use things you can use, ive been cooking xmas dinners for 16 years, its just the same as a sunday lunch, but I never make sauces and stuffings from scratch, I always use packet mix.

Starter - pate with toast. You can buy the pate, and the toast should be easy
Main - Turkey crown (easier to cook than fully boned) have it with mash if you can't be bothered to do roasties
Desert - buy a packet of frozen summer fruits and leave them to defrost for 10 minutes while you melt some white chocolate. Pour the melted chocolate over the fruit leave it to set for a short while...Lovely

Chicken and Chorizo with Rice

½ cup diced salt pork
2 cups of finely chopped onion
3 cloves of garlic minced
2 green peppers, seeded and chopped
1 red sweet pepper, seeded and chopped
1 ½ lbs of chorizo (bulk, or skin removed and broken up)
4 cups of chicken stock
Salt and pepper
1 dozen pimento stuffed green olive
½ cup crushed saffron threads
3 lbs of cut-up chicken pieces
1 tablespoon of paprika
¼ cup of olive oil
2 cups of uncooked long grain rice
1 cup of fresh or frozen peas


In a dutch oven, combine salt pork, onion, garlic, green pepper, red pepper, and chorizo. Cook together until onions are wilted. Add ¼ cup of broth, salt and pepper to taste, olives and saffron. Set aside. Sprinkle chicken with salt, pepper and paprika. Brown in hot olive oil and then place in dutch oven. Stir in rice, remaining broth and chorizo mixture. Cover and bake in pre-heated 375° oven for 1 hour. Uncover and stir in peas and then bake for an additional 10 minutes.

This is a great simple one pot meal you can serve with an appetizer, or just tortillas, rolls and a salad or fruit salad you can do ahead so that day your pretty hands free in the kitchen, or buy a nice dessert from your neighborhood bakery or store's deli secion. They have tons of grreat stuff. Do a kind of semi homeade. It' a busy world today, nothing wrong with that

It seems like a lot of people are making spaghetti or lasagna this year.We are having chicken and bbq babyback ribs.
