I'm baking a birthday cake for my mum's birthday on Boxing Day. It's going to be made from a Victoria Sandwich recipe and then iced - if I bake it today, and store it in an air tight container, roughly how long will it be edible for? Should I put it in the freezer and defrost it the night before (without the icing on)?

In an air-tight container that will be fine and will keep for at least 1 week. DO NOT however, put it either in a fridge or freezer, the condensation therein will, when it defrosts, make the sponge 'soggy'.

If i was you I'd bake the cake & ice it on Boxing Day! Then it will be lovely & fresh - doesn't take 5min to make a cake. Having said that though i'm a bit crazy like that - I'm often up at 6am baking stuff :o)

i take advantage of those storage packing containers for transport basically. If i'm carry a cake to my brothers homestead for Christmas as an occasion. brownies do no longer save nicely (a minimum of those i make). I even have saved a number of those plastic issues which you place on a pizza to maintain the conceal from sticking to the cheese and that i take advantage of them on brownies to maintain plastic off the icing. I then conceal with plastic wrap and bypass away the brownies out of the refrigerator. As I indicated above, I even have some rubbermaid cake packing containers that i take advantage of for transport.

DONT FREEZE IT ! - if you freeze it will loose its fresh taste.
if u put it an air-tight container it will probably be alright for about 4 - 5 days

if you really want a cake that will last forever, get an artificial cake......

tell everyone they get a fake piece of cake, and if they want a real one, then its an extra dollar....

i dont like cake,so any i get given are stored in my dogs
