I never do ~ I either wrap em up in some tinfoil with a tiny bit of butter/lemon/herbs... whatever you like
OR
I've also used a pie plate with tinfoil on top... this works well too. Either way you can flip the whole parcel and the veggies pretty much steam this way & dont get too mushy from the direct heat.

Not sure about hotplates, but I usually grill them on the top row, is that the same? I use a basting brush to lightly coat them with butter and just let them sit on the top row of the grill.

Season them. Wrap em in foil. Then poke holes in the foil.

We roasted potatoes & pumpkin on ours one year, but did it in foil trays, It worked out OK, but would rather mine done in a conventional oven!

I dont because I like my veges steamed first. However, some people do this, so it is really up to you.
