I love good, authentic Mexican food, which can be hard to come by in the Midwestern United States. Fortunately, there's a little hole-in-the-wall restaurant about 20 minutes' drive from here where the two women owners/cooks really know their stuff.
The tamales are hand-made, and if you've ever prepared the real thing, you know how complicated and time consuming that process can be. Everything else is equally good and made with ingredients that they import from their home region in Mexico.
The average U.S. version of Mexican food swimming in that ubiquitous red sauce tastes like garbage compared to what these ladies fix!

Mexican cuisine is as rich, complex and upscale as the best Italian, french or any other kind. The kind of food that is known in the US is just the easy stuff, Tex-Mex is believed to be Mexican food while in reality is not properly Mexican is almost like believing that pizza is a NY thing... funny huh?
there are tons of wonderful dishes, is nearly impossible to decide...
"camarones al ajillo"
"chiles en nogada"
"Barbacoa de cordero"
"Carne asada a la tampiqueña"
just to give you some examples of great dishes...
don't believe for a second that Mexican food is only spicy peppers and cheese, and fajitas... fajitas is an unknown word in Mexico, maybe not by the border. And cheese is used only in few real mexican dishes...
But, guess what, Tex-mex is deliciuos too. Give me some fajita quesadillas!.

Fried Iguana! Just kidding. Yes, I love Mexican food. It's hard to pick a favorite. Probably a burrito (steak meat, rice, salsa). If I'm ordering at Taco Bell (not authentic Mexican food) I almost always order the Gordito (Baja or Supreme).

Mmmmm Mexican! I love chicken enchiladas and black beans! But in the town I used to live in there is a family own 'restaurant' (you wouldn't know it's a restaurant if it weren't for the little sign because it looks like a deserted shack) but the food is SO good! Their homemade jalapeno poppers are to-die-for!

I love cheese enchiladas with a side of rice and beans. Specially the "suisas" or swiss. These come in a green sauce instead of the traditional red sauce. There is a variety of enchiladas from different regions in Mexico. This is because Mexico has had a variety of invaders including France, Spain, the U.S.A to name a few.

I l-o-v-e mexican food!! My favorite depends which restaurant I go to. But it ranges from quesadillas, nachos, chicken tacos and chimichangas. And of course the chips and salsa can make or break my dining experience. A good salsa is key!!

Mmmmm. I like Mexican food alot; as long as it isn't spicy. My favorite plate is a soft taco, enchilada, beans and rice. and a LOT of tortilla chips.. Mmmmm. I am getting hungry...

I just found the greatest Mexican restaurant I've ever eaten in. My favorite is their chicken chimichanga with rice and beans. YUM!!
