You can't. Unlike many animals, humans do not have an eye that functions well in dim light.

Dogs and cats have special structures in their eyes to allow for better night vision. We have eyes more like diurnal birds, sees good detail and colours but not good in twilight or night time light.

Carrots will not help. Vitamin A supplements are not recommended as Vitamin A is toxic in doses that supplements can deliver.

Human eyes aren't really meant for seeing in darkness, but with practice probably your eyes can adapt to a low light environment Consumption of carrots may help, but don't over-do it. Why would you want to strain your eyes in the dark?

There are some yellow tinted lenses that make you see much clearer.
Really any shade of red also as they don't use up the part of retina for color vision.

Take vitamin A...or eat vegetables rich in vitamin A like carrots.
