i donot have a candy theremometer i need to know how long my sugar and sour cream needs to boil to get to 230 degrees!!!!

no way to tell you exactly how long.

you can do a cold water test:

get a cup of cold water -

drop a tiny bit of your cooking mixture into the water.

if it forms a ball (no tail, no little tiny balls, just one solid ball) then it is at soft ball stage. soft ball means you can pinch it and it will deform. this is easy - just be careful. sugar burns are terrible

I'm with you on this - candy thermometers are a pain. When I learned to make peanut brittle, I did it in my microwave until I got it right (My microwave is stronger than most). That way you can always use the same time for the recipe. (I've made 14 peanut brittle presents so far this week.)

230 degrees is considered "soft ball" stage, which means you heat it until you can take a sample of it & drop into a glass of cold tap water & it will form a "soft ball". Hope this helps.
