The protein changes its shape (molecular structure) but it is still there. Due to the fact that it changes its shape the digestion will be slightly different but it is still protein

No...that's where the protein is and it's not reduced by cooking.
I use egg beaters eggs....Southwestern style is very good with less fat then the regular egg. The yoke is also good, but has all the cholesterol.
