Too much salt is bad for you, because it can cause too much water retention, leading to extreme cases of swelling in the brain and other organs and can harm your arteries. It's so plentiful in available foods that it is very easy to consume too much. However, you do need a certain amount of milligrams everyday to maintain a proper chemical balance in your body.

The circumstances are similar for sugar.

It's not bad, but people genearlly consume a lot more of it than they should. Some salt is required in your diet for your body to mantail the proper electrolyte balance. But the excess salt is bad for you - hypertension, fliud retension and so on. Sugar has no value at all. If you were to never eat white sugar again you'd be just fine.

Austronauts are not necessarily an example to follow in terms of diet. Their bodies get prepared for an unusual and harsh environment. The goal is efficient survival not the healthiest regimen. There is a reason why austronauts are subject to strict health screening. Their bodies need to be very healthy to begin with in order to be able to take a lot of abuse and not collapse.

Both salt and sugar are fine in moderation.
Most healthy people would rather have you not eat the processed foods (hot dogs etc) and the items with HFC - High Fructose Corn Syrup (ketchup, soda etc)

Simple enough, the HFC is so concentrated that its very easy to put on weight and being overweight is unhealthy.

They are astronauts, we are not, maybe their biological needs in space are different.
Here on earth too much salt and sugar -I said "too much" only-
can make you sick. Salt in excess can give high blood pressure by water retention, it also damages the kidneys. Sugar in excess can make you a diabetic person and so on.

salt is NOT bad for you but too much of either is...too much of ANYTHING is bad for you. i don't know much about astronauts but obviously they have to be in peak physical shape to go up into space. therefore too much salt or sugar is simply not conducive to being that healthy and so they cut down before going up there to reduce health problems.

like EVERYTHING in the world, salt and sugar in too large of quantities is bad for you. even when you drink too much water (even filtered) it's bad for you --you can throw your electrolyte balance off balance and make yourself sick. so basically, it's not the substance, it's the amount.
