With kids it's all presentation. Make it look good (cartoon characters are popular), and she'll eat it.

Like the other post(s) state, keep offering the healthy foods - toddlers go through stages all the time of liking and disliking foods. It's almost as random as what mood they are in at that moment. At the same time, I would sneak as many fruits and veggies into other foods that she will eat - just to make sure she's getting what you want her to. Maybe set some sort of meal rule that she needs to at least try everything on her plate - whether that means one or two bites - but she has to at least try it.

If you are having problems with vegetables, try offering raw veggies cut up finger-food sized with some dressing or cheese sauce. My kids hate cooked veggies but will eat all kinds of things raw. Also, take her to the produce section with you and let her pick something out. Kids are more likely to eat things if they feel empowered in the decision making process.
I would avoid "hiding" things in their food though. If they catch on to the fact that you are "tricking them" into eating things they "don't like" they may decide they don't trust you, and won't want to eat anything you give them.

I agree with the first post of cheese on foods. Also another thing that really works well is sauses. My son will eat just about anything as long as I provide low fat ranch dressing or ketchup/bbq sause for him to dip things in. Also consider if she'll eat lasagna or spaghetti. Both of those are absolutely fantastic for "hiding" healthy items and kids not figuring out whats in it. Rachel Ray had an awesome red and green lasagna recipe and the green was from spinach. Mind you I wouldnt' eat it knowing it's spinach, but I can gaurantee my son would!
Edit: Also consider is there an adult/older child who she looks up too? At this age they love to copy those they look up to. My son wouldn't touch any veggies for the longest time until his daddy started eating peas in front of him as a snack. LOL he thought it was a treat since no one was telling him to eat his dinner so he'd beg for a bite! It works so much better when I introduce him to new foods to treat it as a snack/goodie instead of adding it to the dinner plate. The same thing worked with raw carrots. He didnt' want a thing to do with them until I started snacking on them as in between meal treat.

it takes babies and todlers numerous times to test a food out and decide they actually dislike it...continue with hiding her veggies in her rice,or some mashed potatoes...also when you eat dinner,be sure to eat the same healthy foods and at the same time explain that they will help her to stay healthy and grow big like mommy..if she still refrains from eating them...continue to put them on her plate and let her feed herself...i do this with my 18 mt old son..i put foods on his plate that i kno he is picky with,and i continue to put them there...just tonight he finally ate some of his broccoli! it takes time and consistency..plus a little praise..eventually she will decide what she truly likes and dislikes,and if all else fails and she doesnt like her vegetables..try giving more fruits to make up for the loss...good luck!

I have good luck with peanut butter and cream cheese (not together).
My kids love peanut butter coins - spread p.b on a wrap, place a banana on it, roll it and cut in slices.
scrambled eggs work well, especially with ketchup or cheese
cottage cheese and fruit
cucumber cheese bites - cut a cucumber lengthwise, hollow out some of the center, fill with cream cheese
bagels with peanut butter, or cream cheese, or jam
fruit and cheese kabobs - pieces of cheddar cheese and alternate with pieces of fruit on a skewer
applesauce
fresh berries mixed with yogurt
fruit pizza - pizza crust spread with yogurt and top with fresh fruit

What I do to introduce a new food is pretend that I'm eating it myself and then my daughter will say "what's that?" and I'll say "wanna try it?" I've gotten her to eat a few things that way and she's PICKIER than anyone when it comes to food! :D
