OYSTER DRESSING

1 pt. oysters
1 sm. bag Pepperidge Farm Dressing Mix
2 eggs
2 stalks celery, chopped
1 med. onion, chopped
4 eggs, boiled, chopped
1 stick butter
Turkey giblet and juice

Mix well. Bake in 350 degree oven until golden brown.

1 bag sour dough or french bread dressing/stuffing mix (I like Columbos if you're in the Bay Area)
1 pint Oysters roughly chopped (SAVE THE JUICE use one of those cutting boards with the rim to catch it if you have one)
3-4 stalks celery chopped
1 large onion chopped fine
3-4 cloves fresh minced garlic
the juice from the oysters plus one cup chicken broth or stock
2 eggs
the seasoning packet from the mix plus 2 teaspoons oregano and 1 teaspoon ground sage
Couple splashes of worchestirshire sauce (sp)
Fresh black pepper to taste
Optional - but very good 1 cup chopped walnuts yum!

Mix this all together in a big bowl preferably with your hands (clean). Stuff some loosley in the bird if preferred - or bake in a covered dish for appx 30 minutes till hot and steamy.

I prefer as is in their liquor.
If battered some Sweet Chili sauce, Tartare or 1000 Island Dressing.
