Not all Russian planes are called MIG's.

MIG is the abbreviation of the name of one of the aeroplane manufacturers, like the Russian version of Boeing.

They also have fighters and bombers which are known as SU.

Nato has always given the code names usually beginning with the letter F. The MIG21 was known as Fishbed for instance.

MiG is short for "Mikoyan-Gurevich", the former name of the design bureau that developed a significant number of Russia and the old Soviet Union's aircraft.

But they were just one particular company, albeit the most well known - some of the other famous aircraft designations were:

Su - Sukhoi (famous for fighters)
Tu - Tupolev (famous for bombers)
Il - Ilyushin (built a number of famed WW2 attack aircraft, but mostly made transport and utility planes)
Yak - Yakolev (all sorts)

Evidently MiGs are the most well known, probably due to their proliferation across the world.
