I asked a co-worker and they said it usually has pickles, tomatos, black olives, green olives, baby corn, and a type of dip; however all of the information I've found suggests different things.

The party is tonight so I may either rush to the grocery store or try my local deli's. =/

A relish tray usually consists of the following:

Deviled eggs, sweet and dill pickles, black and green olives, baby carrots, celery sticks, radishes, broccoli, cauliflower, green onions and red, green and yellow pepper strips with a couple of different dips made from sour cream and/or cream cheese and dry soup mixes or you can by jarred dressings like Ranch and use that for a dip.

Carrots and Celery are a good start. To give it some color, add radishes, cherry tomatoes, green and black olives, and green onions. (No one eats the green onions, but they look pretty). There are lots of pre-made dips - I hear Marzetti's is good (probably in the vegetable section). Mrs. Knorr's Spring Vegetable Soup Mix (dry) was also great with sour cream, but i don't know if they discontinued it.

Here is a great relish tray idea, it is so easy and looks great

RELISH/VEGETABLE/DIP TRAY

Use hollowed-out red cabbage as bowl to hold dip. Cut off small amount of cabbage on bottom to make a flat surface and keeps it from wobbling. Set cabbage in center of large tray or plate. Fill with spinach dip; sour cream stirred vigorously with thawed package of frozen spinach. Surround cabbage with colorful sections of fresh vegetables, carrot sticks, fresh mushrooms, broccoli florets, cauliflower florets, etc.
