We were playing around with vanilla vodka at our christmas party the other night. The drink we made was great but not something you can do fully without special equipment.
We took sugar, lemongrass, ginger and water and made a strong syrup out of it, then mixed it with the vanilla vodka. We then put it while still hot into an old fashioned whipped cream canister and added 3 nitrous charges to it to carbonate it. They were the best shooters ever.
You can still do it without carbonating it and they would still be tasty but the carbonation was what made them.

I like vanilla vodka in a white russian. (Kahlua, vanilla vodka and cream)
I also like pineapple upside down cakes
3 parts vanilla vodka
1 part frangelica
splash of pineapple juice
shaken over ice, strained, then add a couple drops of grenadine. The grenadine will sink to the bottom. When the drink is drank all at once, it is incredible how much it tastes like what it is called.

Love it in a white russian. very sweet drink.
cheesecake martini = 11/2 oz vanilla vodka + 11/2oz. cranberry juice.
My friend always gets vanilla stoli + coke. It's great with 7up too.

1/4 oz Lemon vodka
1/4 oz Strawberry Vodka
1/4 oz Vanilla Vodka
1/4 oz Zinamon Vodka
1/4 oz Lime Vodka
little bit of Grenadine
little bit of Pineapple juice
(careful not to overdo it on the pineapple juice)
