chestnut and sage stuffing
Serves: 4
Ingredients
200g jar Sierra Rica Organic Chestnuts
25g fresh breadcrumbs
1 tbsp Bart Spices Freeze Dried Sage
2 tbsp freshly chopped parsley
Zest and juice of 1 small lemon
4 Waitrose British Pork Loin Chops
8 Waitrose Smoked British Rindless Streaky Bacon Rashers
300g pot Joubère Fresh Chicken Gravy
2 tbsp sherry
Salt and freshly ground black pepper
Method
Preheat the oven to 200°C, gas mark 6. Roughly chop the chestnuts. In a large bowl, mix together the chopped chestnuts, breadcrumbs, herbs, lemon zest, half the lemon juice and seasoning. Mix well.
Press the mixture onto the top of the chops. Stretch 2 rashers of bacon and wrap them around each chop, tucking the ends under. Place in a roasting tin and bake for 30-35 minutes, until the chops are cooked through and the juices run clear.
Remove the chops from the roasting pan. Drain off any excess fat, reserving the pan juices, then pour the fresh gravy, sherry and remaining lemon juice into the roasting pan. Bring to the boil on the hob and simmer for 2-3 minutes, then pour into a jug. Serve the chops with the gravy, mashed potato and broccoli.
Cook's tips
To stretch bacon, hold one end of the rasher and run the back edge of a knife along it.
Please Note: Ensure the pork is cooked thoroughly, the juices run clear when pierced and there is no pink meat. Wash work surfaces, utensils and hands thoroughly after handling raw meat.

You need to find out if your friend's husband is allergic to all things onion, or just yellow, white, and red. This will make a difference whether or not you can use onion powder etc. Have you considered substituting leeks? The white part can be slice, chopped and sauteed just like onions and impart a milder flavor, but still gives you that wonderful onion component. You might also consider the following as an alternative:
3 stalks celery
2 carrots, diced
1 lb. turkey italian sausage
2 cube butter
1/2 cup chopped water chestnuts
1/2 cup chopped granny smith apples
2 eggs, beaten
1 box Mrs. Cubretson's cornbread stuffing mix (check for onion) or other bread or cornbread cubes
1 box organic chicken broth, heated
Salt, pepper to taste
1 T rubbed sage
Saute carrots, celery and sausage in butter until cooked. Add water chestnuts and apple. Pour over bread cubes and stir in eggs. Add broth until mixture is moistened but not soupy. Add sage and salt and pepper to taste. Pour into baking dish, cover and bake for 1 hour.

If you're roasting a turkey-I'd cook it unstuffed. Make two pans of stuffing one with and one without onion and bake them at the end of the turkey cooking time. Make a bigger pan of "with" if everyone else wants onion. Put a few stalks of celery and some sage inside the bird to enhance the flavor while it cooks.

There is onion salt and onion powder for flavoring, if the problem is digestion.
But if it is simply they don't like the onion taste, sage is a wonderful flavoring - some diced mushrooms - celery chopped fine - a little fresh parsley - makes a great stuffing.

buy the stuffing mix in a box..corn bread stuffing is great.....or you can use onion salt with pieces of liver, chopped up very small, adding spices for flavor

If he is allergic to onions, do not use anything that says onions . Try chopping a leek very fine. That should give you flavour.

How about making one "with" and one "without" just because "he's special!!!". Be careful about the utensils and bowls you've used making the "with" one. If he's REALLY ALLERGIC using the same bowl could trigger! Merry Christmas and Happy Holidays!!
