CHINESE VEGETABLE CASSEROLE
2 (16 oz.) cans French cut green beans
2 cans bean sprouts
2 cans white shoe peg corn
2 c. chopped celery
1 c. chopped onion
1 can sliced water chestnuts
1/2 c. chopped green pepper
1 c. grated sharp cheese
1 c. sour cream
2 cans cream of mushroom soup
1/2 c. slivered almonds
Salt & pepper to taste
Drain all vegetables. Mix all ingredients together. Place in large casserole baking dish, bake at 350 degrees for 45 minutes. Or place into crock pot on high for 3 hours. Freezes well.

I'm done with the traditional green bean casserole and can't imagine wrapping my lips around any of it for the rest of my life. However, I love green beans, so here's an alternative recipe:

2 lbs fresh green beans, picked over and trimmed
3/4 pound button mushrooms, cleaned and sliced
1 yellow onion, diced
10 slices platter bacon, chopped
1 cup whole milk
1 cup half and half
1 tsp salt
1/2 tsp fresh ground pepper
1 T thyme
1/2 cup flour
1 cube butter, divided in half

In saute pan, melt butter and add onion and mushrooms. Season with salt and pepper. Add minced garlic if desired and cook until onion is translucent and mushrooms have wilted. Saute bacon and drain. Add to mushroom mixture. Set aside. Steam green beans until crisp tender and add to mushroom mixture. In sauce pan, melt remaining butter and add flour to make a thick roux. Stir in milk and half and half, whisking to break up lumps. Season with thyme and salt and pepper. Cook until thickened and bubbling. You may add 1/2 cup asiago cheese at this point if you'd like. Pour over green bean mixture and place in baking dish. Bake for 45 minutes or until bubbling.
