With me it depends on what lake I am fishing and time of year. This time of year I am looking for balls of bait fish relating to some kind of structure. Be it brush pile, drop off, etc.
Spring I look for the warmest water I can find, then look for structure.
I have both my Lowrance 332C & 520C set so it show little of what is in the water, I am more interested in structure and bottom composition, rock, mud, gravel, etc.
This web page may help you some with figuring out how to set you depth finder up. This web page is mostly for the higher end Lowrance units, but it should help you with some of the basic settings that would apply to all units...except the new Hummingbird side views.

Always anchor up current of your structure. If your drifting, calculate the wind and current to see which way you'll go. Fish wait in ambush for bait carried by the current.

a fish finder takes a sounding in a cone shape, it gets larger as it deepens ,
so fish over the side of the boat,
