SPINACH QUICHE

1 pkg (8 oz.) cream cheese, softened
4 eggs
1 cup pet evaporated milk
1/4 to 1/2 tsp. ground red pepper
1 pkg (10 oz.) frozen, chopped spinach, thawed and thoroughly drained
1/2 cup diced ham and/or chopped onion
1 prepared deep-dish pie crust, frozen

In a medium bowl, beat cream cheese with electric mixer until creamy. Beat in eggs, evaporated milk and red pepper.
Squeeze spinach between paper towels until almost dry. Stir spinach and ham or onion into egg mixture.

Pour into frozen pie crust. Sprinkle with salt and pepper to taste.

Bake in a preheated 350 degree F. oven on a preheated baking sheet for 55 to 65 minutes, or until a knife inserted in center comes out clean.

Makes 6 servings.

Variation: Top quiche with tomatoes for added color.

CHEESEBURGER QUICHE

Quiche pastry or frozen pie crust
Custard
1/2 lb. hamburger
Salt & pepper to taste
1/2 c. grated sharp Cheddar cheese

CUSTARD:

2 eggs, beaten
1 c. canned milk
Pinch of salt, cayenne, nutmeg if desired

Fry meat until brown; drain fat. Season with salt and pepper. Place meat and cheese in prepared quiche shell. Pour on custard. Bake in preheated 375 degree oven, 40-45 minutes or until custard is set and lightly brown. Allow to set 3-4 minutes before serving.

Quiche is pie crust + beaten eggs + whatever filler + optional cheese
Some filler ideas:
1. Cajun "Holy Trinity" of chopped celery, onion, and green bell pepper with salt, pepper, and cayenne pepper, Italian herb blend, and chopped ham bits. (Good with a bit of shredded cheddar)
2. Broccoli and bacon with salt, pepper, and a touch of cheddar.
3. Spinach, green onion, and chopped zucchini with Montreal Steak seasoning.
Just make sure to bake the quiche for at least 35 minutes at 350 degrees to cook the ggs all the way through.

This is a great recipe. I use frozen crusts and just leave them out while I am mixing the rest of the ingredients, it works fine.

INGREDIENTS
1/2 pound thick sliced bacon
1 (10 ounce) package frozen chopped spinach, thawed
1 (8 ounce) container sour cream
salt and pepper to taste
2 (9 inch) unbaked pie crusts
2 tablespoons olive oil
1 onion, finely diced
1/2 pound fresh mushrooms, finely diced
2 cups finely diced smoked ham
8 ounces Monterey Jack cheese, shredded
8 ounces Cheddar cheese, shredded
4 ounces Parmesan cheese, grated
8 eggs
1 1/2 cups half-and-half cream
1 tablespoon dried parsley
salt and pepper to taste

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside. Cook spinach according to package instructions. Allow to cool, then squeeze dry.
Heat olive oil in skillet over medium heat. Saute onions until soft and translucent. Stir in mushrooms, and cook for 2 minutes, or until soft. Stir in ham and cooked bacon. Remove from heat.
In a large bowl, combine spinach, sour cream, salt and pepper. Divide, and spread into pie crusts. Layer with bacon mixture. Mix together Monterey Jack, Cheddar and Parmesan, and sprinkle over pies. Whisk together eggs, half-and-half and parsley. Season with salt and pepper, and pour over pies.
Place pies on baking sheet, and bake on middle shelf in preheated oven for 40 minutes. The top will be puffed and golden brown. Remove from oven, and let stand for 5 to 10 minutes.

If you blind bake the pie crust, I will hold up better.

i think youmay need to defrost the pie crust first
