Yes, but remember that it will make your cookies more crisp, less chewy.
If you have shortening and you want some butter flavor. I have used half butter half shortening and still gotten a chewy cookie with all of the flavor.

Butter tends to burn or make cookie to hard, shortening better to cook or bake with Crisco makes a good Butter flavor cost is nice and cheap... Spouts a natural store has a different brnd better for you?!?

Butter will make the texture MUCH different than the recipe is calling for.
Butter will make the cookie pool and melt when you bake them. Butter flavoured shortening will keep them tasty but still able to roll our or cut with cookie cutters.
you can use butter instead, but be aware that the cookie will be different not only taste wise but they will bake completely different.

use shortening and some butter flavored extract in the batter mix instead. The extract is usually yellowish to give that "butter" look
